Mixology: Matzah Edition (Young Adult Program)
Join YALCers and experienced cocktail makers, Misha Kestler, Lila Cantor, and Aaron Bellings in our continued Mixology series, with a fun Passover twist! Each time we gather, we’ll learn how to make some new drinks.
Drinks
White Wine Spritzer
2 parts white wine
1 part club soda
4-5 dashes of bitters
Add seasonal fruit as desired
Paloma
Kosher salt
1 Grapefruit wedge
1/4 cup fresh grapefruit juice
1 tablespoon fresh lime juice
1 teaspoon sugar (can sub with agave)
1/4 mezcal or tequila
1/2 cup club soda
Food Pairing: Matzah Pizza
Ingredients
2 whole matzos
3/4 cup shredded part skim mozzarella cheese
salt and pepper
1/4 tsp dried basil
1/4 tsp dried oregano
Red pepper flakes to taste
3/4 cup marinara sauce
2 tbsp grated parmesan
Sliced/cut up toppings (e.g. peppers and onions, olives, pineapple)
Instructions
Take out oven rack
Preheat oven to 500 degrees
Spread matzos on a large piece of foil or baking sheet. Spread half of the mozzarella cheese on the matzo and season with spices to taste
Place on the rack, put in the oven, and cook for 3 minutes
Take out the matzos and add the sauce, remaining mozzarella cheese, the parmesan cheese. Add any toppings you may be using
Return to oven and cook for between 8-10 minutes until cheese is bubbly
